Southern Sweet Potato Pie

3 Tablespoons All purpose flour
1 ½ cup sugar
1 cup roasted sweet potatoes (red garnets if possible), mashed
2 whole eggs
1 ½ tsp pumpkin pie spice
1 teaspoon salt
6 Tablespoons  butter, melted
¾ Cup half/half or evap milk
1 unbaked pie shell

Peel sweet potatoes and mash in bowl until smooth w/o lumps
In large bowl, whisk together flour, sugar, spices and salt until blended
Add sweet potatoes, eggs, butter, and milk
Whisk until well-blended and smooth
Pour into prepared pie shell

Bake at 375 for 45-60 minutes until golden
across top
and a bit rounded
